Made with the Brazilian super food Açaí, this recipe is packed with antioxidants, fibers and healthy fats - a perfect quick and healthy way to nourish your body!

Smooth Açaí Bowl with crunchy granola
INGREDIENTS (1 PORTION)
- 1 frozen banana, cut in slices
- 8 açaí drops (around 70 g of frozen açaí pulp), I use Wholey Organics
- 50 g fresh blueberries
- 50 g frozen raspberries
- 3 pitted dates
- 150 ml oat drink
- optional: 1 tbsp natural protein powder or vegan collagen powder
- 2 tbsp chai ginger granola
- 1 tsp runny almond or cashew butter
- cocoa nibs, coconut flakes and fresh berries
METHOD
- Let the banana slices thaw for 10 minutes before you start. In a high-speed blender, mix together banana, açaí pulp, blueberries, raspberries, dates and oat drink until a smooth consistency. It’s optional to add some protein or collagen powder (it will give you a much more smooth consistency). You may need to stop and scrape down the sides of the blender occasionally to ensure everything is well blended.
- Pour the açaí mixture into a bowl and top with granola, fresh berries, cocoa nibs, coconut flakes and nut butter.
Note from Elina: "Let the bowl sit for a couple of minutes before eating. I know you must think: „But it will melt away!“. No, it won’t. It will be just perfect when you eat it 🙂
