Comforting Sweet Potato Ginger Soup
Warm up your soul this season with a delicious bowl of Sweet Potato Ginger Soup. This vibrant ayurvedic vegan dish combines the natural sweetness of roasted sweet potatoes with the kick of fresh ginger. Topped with crunchy, spiced chickpeas, it will nourish your body and lift your spirits. Perfect for chilly days, this soup is not only quick to prepare but also embodies the essence of comfort food, making it a go-to choice for cozy lunches and dinners.
Ingredients (for 1 portion)
For the soup:
- 1 medium sweet potato, peeled and cubed
- 1 teaspoon of fresh, minced ginger (or more if you like it spicy)
- 1 tbsp olive oil
- 0.5 tsp ground cumin
- 0.5 tsp ground coriander
- 1 tsp ground turmeric
- 0.5 tsp black pepper
- A pinch of Asafoetida (optional)
- 150 ml coconut milk
- Salt to taste
- Water as needed
For the crunchy chickpeas:
- 70 g cooked chickpeas
- 1 tsp sesame seeds
- 1 tbsp olive oil
- 0.5 tsp ground cumin
- 0.5 tsp paprika
- Salt and pepper to taste
To serve:
- Chopped spring onion
Method
- Preheat oven to 400°F (200°C) for the chickpeas.
- Prepare chickpeas: Mix chickpeas with sesame seeds, olive oil, cumin, paprika, salt, and pepper. Spread on a baking sheet and roast for about 20 minutes until crispy.
- Meanwhile: Heat olive oil in a pot over medium heat. Sauté minced ginger until fragrant. Add cumin, coriander, turmeric, pepper, and asafoetida. Cook briefly to release flavours.
- Add sweet potato cubes and 1/2 cup water. Bring to a boil, cover, and simmer for 15 minutes until sweet potatoes are soft.
- Add coconut milk and blend until smooth. If you find the soup too thick after blending, you can always add a bit of warm water to reach your preferred consistency. Season with salt.
- Serve soup topped with roasted chickpeas and chopped spring onions.
